My wife wanted spicy meatballs. She channeled the flavor of a Texas Hot link sausage and dropped into these suckers. She nailed it and now I'm gonna force her to make all my videos and recipes going forward. Work smarter folks, not harder.
Seriously though, these we very good and Virginia nailed it.
Ingredients

1 lb ground beef 80/20 or 70/30 meat/fat concentration

2 tablespoons Perpetual Beef

1 teaspoon paprika

1 teaspoon cayenne
-
1 tablespoon mustard powder
-
3 cloves garlic
-
½ a medium white onion sweated in a pan with some oil until translucent

¼ cup milk
-
2 egg yolks
-
¼ cup shredded pepper jack
-
¼ cup grated parmesan + more for finishing

¼ cup bread crumbs
-
2 tablespoons chopped flat leaf parsley

2 cups marinara sauce

Basil for garnish

Prep all your ingredients… you know mise en place
Set your smoker up to cold smoke (sub 150 degrees)
Mix all ingredients in a bowl until well incorporated
Form mixture into 2-3 ounce balls and place on a wire rack
Cold smoke meatballs for 30 minutes
While meat balls are smoking, set you grill up to sear and preheat a cast iron pan
After 30 minutes add some oil to your pan and sear the sides of your meat balls, 2-3 minutes each side
After searing, add you marinara sauce cover and move to a cooler section of your grill or place in the over at 350 for 30 minutes
After 30 minutes, microplane some parmesan cheese onto your meat balls and garnish with basil
Serve with tooth picks or as a meat ball sub… I heart meat ball subs
