Big boy has diverse table needs. I eat meat, but I didn’t for 6 years and while it may be a bit of surprise, 5 days of the week I generally go meatless.
My wife likes to eat even less meat than I do, so I like to say I have diverse table needs. Sometimes when I want to cook meat, I’m cooking veggies instead and I still want to throw down on the smoker or grill; which is great for this recipe because I get to do all of that… veggies meet smoker meet grill meet wife's mouth and it’s good, really good.
The tofu crisps up a little around the edges like carnitas and the pork seasoning helps give it some umami and pork sweetness along with the smoky marinade. Serve it as tacos and you’re Living Forever my friend.
Ingredients

1 lb firm tofu

Corn tortillas
-
¼ a cup crumbled queso fresco

½ a cup diced white onion
-
¼ a cup chopped cilantro

BBQ sauce
-
Salt
-
½ cup full fat Greek yogurt
-
2 tablespoons Perpetual Pork (sub your favorite pork rub)

1 tablespoon smoked paprika
-
1 tablespoon chili powder
-
Zest from 1 lime and half its juices

4 cloves garlic
For the marinade
Directions

Wrap the tofu in paper towels
Place the tofu on a sheet pan and something on top of the tofu to weigh it down to press the water out
While the tofu is being pressed, put all the marinade ingredients in a blender and blend until smooth. Taste and adjust salt levels
After an hour, slice the tofu into thirds so you have 3 shingles
Pour some marinade on a sheet tray, place the shingles on the marinade and pour some over the top. Let marinade for at least one hour and up to over night
While your tofu marinates, set your smoker up to 275 degrees
After marinating, place your tofu on a wire rack and smoke for 1 hour
After your tofu is done smoking, sear your tofu on all sides on a griddle or stove top pan. I put a little oil in the pan to help out. Then, cut into little pieces and cook until the edges are crispy. Once crispy, add in some Perpetual Pork rub and a tiny bit of tangy bbq sauce
I like to serve as tacos with white onion, cilantro, cotija cheese and a squeeze of lime juice – I’ve found that using salsa can dominate the flavor so I prefer it without
