If I could make health claims, I would tell you the moment you drink this matcha, your doctor will give you a gold star. Maybe even two. But I can't say that, so I won't say that. Just know that matcha is the real deal. It's basically ground up, top shelf green tea. I mix in some toasted home made almond milk, maple syrup, and sip it from a wine glass with my pinky out. Not every one is matcha person, but if you're on team matcha -- this is for you. The cook is minimal, but you do need to prepare to soak the nuts for about 6hrs.

Roast almonds in a pan on medium heat for 10 minutes, mixing half way through. If you’re using an oven, roast at 350 degrees F.
Let almonds cool in the pan.
When the almonds are cool enough to handle, add them to a large bowl with a lid, add in the chopped dates and water and soak 6 hrs to over night.
When the almonds are done soaking, blend them with the soaking water and dates until frothy and creamy.
Strain the liquid through a fine mesh cloth or a nut bag and into a container for storing.
You can store the milk in the fridge for about a week.
