I know a guy who said he liked salsa. He ate this salsa and then he said he loved salsa. That guy now knows love. Make this salsa, know love. It'll feel better when your team loses.
This salsa has minimal ingredients and minimal prep and it's perfect for a tailgate. The smoke gives it a wow factor. IMO, there's no better bang for your buck than this salsa at a tailgate.

Directions
Watch the video at the bottom of the page!
Set your smoker up to 275-300 degrees F
Quarter your tomatoes, remove the garlic from the peels, drizzle with olive oil and then put on a wire rack on top of a sheet pan
Put your sheet pan on the smoker and smoke for 1 hour
After 1 hour, take the tomatoes and garlic off the smoker
Add the tomatoes, garlic, any juice that dripped into the pan, lime juice + zest, cilantro, 1 chipotle pepper and 1 tablespoon of adobo sauce into a blender and blend until a consistency you like, I went pretty smooth with this
Add salt to taste and if you want a thicker salsa, while blending drizzle in 2-3 tablespoons of olive oil
If the tomatoes aren’t popping, add a little white sugar and more salt and go to the moon.
