This Smokey Salsa Verde is a 10/10 on the easy scale and a 10/10 on the taste scale. You smoke some veggies, then char and blend. That's all she wrote.
The salsa has just the right amount of heat for people who like to know heat is involved. If you don't get down with heat, substitute the serrano peppers with 1 jalapeno and remove the pith. The pith (the white ribbing on the inside of peppers) is where most of the heat is concentrated.

Ingredients

9 Tomatillo Peppers

Half a Medium White Onion

4 Cloves of Garlic

Half a Bunch of Cilantro

Salt to Taste

Set your smoker up to 250 degrees F
Peel the husks from your Tomatillos
Peel your garlic
Slice the stems off your serrano peppers. If you don’t like heat, remove the pith from the inside.
Cut your onion in half and then in quarters
Skewer all veggies (excluding cilantro) through their center. The skewer will make it easier to load them on and off the grill as well as keep them together as they soften.
Smoke your skewered veggies for 30 minutes
10 minutes before your veggies are done, set up your grill for hot.
Char the outside of your veggies
Blend half the tomatillos with all the onion, garlic, and peppers until smooth
Add the remaining tomatillos, cilantro, and salt to taste
Blend until chunky
Serve with chips, in tacos, and give it to your neighbors cause this stuff likes to party
