Smokey Fried Rice
Easy Smoked Veggie Fried Rice (wayyyy better than takeout!)

This smoked veggie fried rice impressed my fiancé. That's a big win at Rolling Bones' House of the Smokey Boy. We had fried rice a few days later at a restaurant in town and she said she wished it was this fried rice and I agree -- this fried rice is something special, with just a touch of smoke to add a subtle depth of flavor that makes something familiar, new and exciting.
Ingredients

1 cup dry long gain white rice

4 large eggs

½ cup diced yellow onion

2 tablespoons diced carrots
-
2 tablespoons frozen peas
-
2 tablespoons soy sauce
-
1 tablespoon vegan oyster sauce (or regular oyster sauce)

2 stalks green onion, slice
-
splash sesame oil (optional, but encouraged)

neutral oil for cooking

Set your smoker up to about 200 degrees
Once your smoker is at temperature, smoke the dry rice, carrot, peas, and onion for 30 minutes
After 30 minutes, get your rice and veg off the smoker. Cook your rice according to the instructions, making sure to go easy on the water so you rice does not come out sticky or mushy
Once the rice is done, pat it dry and put it in the refrigerator for at least 1 hour to over night to dry it out
Heat a pan over medium heat-high with about 1 tablespoon of your cooking oil
Add your rice and sauté with about 1 minute
After 1 minute, move your rice to the side, add a little more oil and saute your carrot, peas, and onion until soft, approx. 3-4 minutes
While your veg is cooking, scramble 4 eggs
Once the veg is soft, add in scrambled eggs and combine together with the rice, carrot, peas, and onion
Add in the soy sauce, oyster sauce and stir — cooking for about 1 minute
After 1 minute, add in the green onion and sesame oil and mix
After mixing, remove from the heat and plate — topping with some green onion for garnish
