Boiled peanuts are one of my favorite summer snacks. My sister and I used to crush these when we were kids. It legit felt like a race to see who could eat more, and I decided to put a smokey boy spin on these by boiling them in wood smoked salt.
The peanuts are just the right amount of tender and the salt levels are balanced nicely with the fat from the soft nut. You're gonna want to make a ton of these, because you're going to want to eat for days.
You can skip the smoked salt part all together, find some at your local farmers market, or buy some online. If you skip smoking the salt, your peanuts will be done in about two hours, most of it passive time. Personally, I didn't find that the smoke flavor came through heavily, it was very subtle -- almost imperceptible to me so I think skipping the smoked salt is a solid move -- but my fiancée found it prevalent and v. tasty so maybe I've blown out my smokey boy smoke radar...

Ingredients

1lb raw (not roasted) peanuts

2 cups kosher salt (or smoked sea salt if you plan to get yours already smoked)
Directions
For the smoked salt
Set your smoker up to 250 degrees F
Pour your salt on a sheet pan, distribute in a single layer, and spritz lightly with water until salt is just moist. Then put your pan the smoker
Smoke the last for at least 3 hours, ideally 6-12 and ever 30-45 minutes, toss the salt and give it a light spritz. Smoke likes to adhere to moisture
Once you’ve smoked your salt as long as you can stand, pull it off your smoker. I supplemented my salt with some smoked Botany Bay sea salt I got at the farmers market.
For the peanuts
Give your peanuts a quick rinse, then put them in a large pot and cover with water until peanuts fully float
Add a few tablespoons of salt into water, stir to dissolve, and taste — keep doing this until your water tastes as salty as the ocean… trust me, this is the scientific measurement
Bring your peanuts to a boil, then simmer 1-2 hours. Starting at hour 1 begin testing peanuts for doneness. I like them to be soft but not completely mushy. For me, this was 1.5 hours
When your peanuts reach your desired doneness, get them out of the water, let them cool then stick them in the fridge until they’re chilled. Boiled peanuts are good hot, but when they’re chilled, they worth fighting your sister for…
