A solid method of measuring salt for a batch of boiled peanuts is a half cup of salt per gallon of water. It doesn’t matter how many peanuts you cook. Just use the ratio of 1/2 cup per gallon for the perfect taste. I also recommend leaving the peanuts in the pot after cooking and let them sit for 30-60 min. They’ll absorb the brine for a juicy peanut. You’ll know they’re done when the peanuts sink to the bottom of the pot.
