Smoked Portabella Mushrooms Smash Burgers

Intro:
I don't <3 intros! these are lights out. Makes 4. I ate 2.
Ingredients:
  • 4 Portobello mushrooms (or as many as you need)
  • As many slices of cheese (I used swiss) as you have mushrooms
  • 1 large tomato for every 4 mushrooms
  • Lettuce
  • Buns (I used Martin's Potato Rolls)
  • Cowboy rub (enough for 4 mushrooms)
    • 1 tablespoon ground coffee (funny name, considering I generally don't use these on tables)
    • 1 tablespoon brown sugar
    • 1/4 tablespoon ground cinnamon
    • 1 teaspoon ground black pepper
  • Marinade (enough for 4 ports)
Instructions:
  • Watch the video :)
  • Mix the rub ingredients together with the marinade ingredients
  • Trim the sides off the Portobellos and cut the stem off
  • Use a spoon to scoop the gills out of the Portobellos
  • Taste your tasty marinade
  • Marinade the mushrooms 1hr to overnight, ideally overnight
  • 30mins - 1hr before smoking, get your smoker up to 250F
  • Once stabilized at 250F, place mushrooms on a wire rack and then on the smoker for 1hr
  • Take the mushrooms off the smoker and smash them in a pan or on a griddle, flip after 2 mins
  • Add the cheese, let it melt
  • Toast your buns
  • Dress your buns with mayo>left over marinade>burger>tomato>lettuce
  • Enjoy some baddazz kickazz mushroom burgers
