Smoked Mango Habanero Salsa

Intro:
Smoked salsa is a nice way to add some depth to your salsa game. Your chips will be happy. I switch up the recipe slightly from the video above, and I think these minor changes end in a better product! Tip: (thanks Willi B!) if you dice the veggies instead of using a food processor, you can control the amount of liquid that makes its way in to your salsa. 
 
Ingredients:
  • 1 habanero pepper, seeded and halved
  • 1 slightly over ripe mango, sliced
  • 4 roma tomatoes, quartered
  • 1 medium onion, quartered
  • 2 jalapenos, seeded and halved 
  • 1 head of garlic, halved
  • juice of 1 lime
  • 1 cup packed cilantro leaves
  • note: don't remove the pepper seeds if you like heat
Instructions:
  • Watch the video :)
  • Set your smoker up for 225 degrees F
  • I didn't do this, but I would recommend wrapping your garlic in tin foil to speed up the cooking time
  • Put your veggies and fruit (excluding cilantro and lime) on the smoker and smoke for 1 hour to 2 hours depending on how smoky you want your salsa and raw you want the veggies. 1.5 hours is my sweet spot, but I went light on the video above for a more fresh/raw salsa with the fruit. 
  • Chop or process your veg with the cilantro and lime juice to desired consistency. I left in all the tomato, but you could scoop out the center if you want a less liquid salsa.
  • Add salt to taste
  • If you let the salsa sit in the refrigerator overnight, the flavors come together in a powerful way!
