- 1 habanero pepper, seeded and halved
- 1 slightly over ripe mango, sliced
- 4 roma tomatoes, quartered
- 1 medium onion, quartered
- 2 jalapenos, seeded and halved
- 1 head of garlic, halved
- juice of 1 lime
- 1 cup packed cilantro leaves
- note: don't remove the pepper seeds if you like heat

- Set your smoker up for 225 degrees F
- I didn't do this, but I would recommend wrapping your garlic in tin foil to speed up the cooking time
- Put your veggies and fruit (excluding cilantro and lime) on the smoker and smoke for 1 hour to 2 hours depending on how smoky you want your salsa and raw you want the veggies. 1.5 hours is my sweet spot, but I went light on the video above for a more fresh/raw salsa with the fruit.
- Chop or process your veg with the cilantro and lime juice to desired consistency. I left in all the tomato, but you could scoop out the center if you want a less liquid salsa.
- Add salt to taste
- If you let the salsa sit in the refrigerator overnight, the flavors come together in a powerful way!
