Intro:
My feelings on recipe intros average out to "just take me to the ingredient list," so to sum it up -- this is very good and my ingredient list is below.
  • 1 bone 4-6lb Pork Butt
    • also called Boston Butt
  • Perpetual Beef Rub (substitute below)
  • (Substitute) makes a bout 2.5 cups
    • 1/2 cup ground pepper (16 mesh is preferable, coarse ground will work)
    • 1/2 cup Diamond Crystal or Morten's kosher salt
    • 1/4 cup packed brown sugar (dark, but light works)
    • 1/4 cup white sugar
    • 1/4 tablespoon garlic powder
    • 1/4 cup paprika
    • 4 tablespoon onion powder
    • 2 tablespoons ground ginger
  • Slather
    • 1/4 cup yellow mustard (any will do - I use Frenches)
    • 1/4 cup hot sauce (any will do - I use Texas Pete)
Instructions:
  • watch the video above :)
  • mix the rub together
  • mix the slather together 
  • trim thin, floppy edges of pork butt. they will just burn
  • apply thin layer of slather to butt (to moisten so rub will stick... butt rub.)
  • apply rub, coat generously (always pat pat pat, don't rub rub rub)
  • let rub sit on pork butt at least 30 mins, ideally over night
  • set your smoker up for 225F
  • smoke at 250F for 3 hours
  • spritz with 50/50 apple cider vinegar/water starting after hour 3 if edges start to crisp
  • Once bark is set and dark, wrap in a foil boat and put back on the smoker
  • finish the cook with smoker temp ~275F
  • take off the smoker when the butt is probe tender, should be about 205-210F and feel like it's probing in room temp butter 
  • after pulling let sit for 1 hour -- I usually let it come down to about 140F internal
  • to serve, pull the bone out, break the meat up with the bone, and serve however you like. I like to sauce the meat and put in on a bun.
