Mushroom bacon and grits is what I want baby! Serve this as an alternative to a meat dish at your next get together and peeps are gonna wish they had two mouths to eat it twice... You can also smoke some shrimp and add to the the gravy after it's all cooked and stone two birds at the same time, one meat eating and one veggie eating with effectively one cook...
All I'm trying to say with that nonsense is that these are very good and flexes in and out of meat/non-meat; the grits are super simple, hella creamy, just the right amount of salty from the cheese and texture compliments the crispy mushroom bacon and savory mushroom gravy perfectly. Don't be fooled by the size of the ingredient list, it comes together fast and you can make it a day ahead! I actually think it's better if you make it the day ahead, the flavors have more time to meld. Make it your own and tag @rollingbonesbbq for a repost!

Ingredients

1 cup stone ground grits (should not be instant or quick)

4 cups of water

1 teaspoon salt

3 tablespoons unsalted butter

1 cup heavy cream
-
½ cup freshly grated extra sharp cheddar

¼ teaspoon white pepper
-
¼ teaspoon ground turmeric
-
8oz trumpet mushrooms, cleaned and sliced into 1/8in strips
-
2 tablespoons soy sauce
-
2 tablespoons maple syrup
-
1 tablespoon olive oil
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 teaspoon smoked paprika
-
1 teaspoon ground black pepper
-
¼ teaspoon liquid smoke
-
8oz cremini mushrooms (also called baby bella), cleaned and sliced 1/8in thick
-
2 tablespoons neutral oil, like vegetable oil
-
2 tablespoons butter
-
2 tablespoons all-purpose flour
-
1 tablespoon creole seasoning
-
½ teaspoon white pepper
-
½ teaspoon paprika
-
½ a medium green bell pepper, diced
-
½ a medium yellow onion, diced
-
1 stalk of celery, diced
-
5 cloves of garlic, minced
-
1 ¼ cups of vegetable stock
-
1 ¼ cups heavy whipping cream
-
2 tablespoons chopped parsley, plus more for garnish

Directions
Cooking your Grits
Bring water to a boil in a large sauce pan with the salt
Once boiling, add your grits and reduce to a simmer. Simmer for about 20 minutes, whisking hard occasionally to bring some of the starch out
After 20 minutes, add the remaining ingredients and whisk until cheese is melted
Cover with a lid and keep on very low heat until ready to plate. If they become too dense, add a little water and stir. They should have the following consistency:
Making Crispy Mushroom Bacon
In a large bowl, whisk the marinade ingredients together
Add the trumpet mushrooms and give them a toss, making sure they are all covered in marinade
Set your smoker up for cold smoking – ideal temps are under 150 degrees F. You can do this by placing a small wood chunk on 3-4 pieces of lit charcoal on a grill with a cover. Wait until the wood starts smoking, then put your mushrooms on the grill grate (or a wire rack, a wire rack would be much easier for transportation-tation-tation) and then put the cover on the grill and smoke for 30 minutes. I lit the wood with the torch and used a few pieces of lump charcoal to keep it smoking
While the mushrooms are cold smoking, set your oven up to 350 degrees F. After 30 minutes on the smoke, put your mushrooms in the preheated oven for 20 minutes.
After 20 minutes, the mushrooms should have lost all their moisture and be a little crispy. As the cool, they’ll crisp more. If you want extra crunch, you can leave them in the oven another 10 minutes, but keep an eye on them to make sure they don’t burn.
Cooking your Gravy
Mix your cremini mushrooms in a bowl with the creole seasoning
Add your neutral oil to a big sauce pan on medium-high heat
Once the oil is hot add your mushrooms
Once your mushrooms have sweated out some of their moisture and are starting to form a gravy, about 5 minutes, add your butter and sauté your onion, celery, and green pepper until soft, 3-5 minutes
Once soft, add your garlic and spices and cook until fragrant – about 1 minute
Next, add your flour and incorporate with the veg, cooking for about 1 minute
Now add your veggie stock and simmer until the flour is fully incorporated, about 2 minutes
Constantly stirring, add in your whipping cream and cook until thickened, about 2-3 minutes
Once thickened, crumble and add your mushroom bacon and cook for another 1-2 minutes
Add your parsley and stir
Taste and add more creole seasoning if desired
Spoon grits into a shallow bowl and the gravy onto the grits
Garnish with chopped parsley
