Directions

1. Watch the video at the end of the instructions!

2. Set your grill up for medium high heat and direct cooking

   

3. Soak your skewers in water if wooden so they don’t catch fire

Yogurt Sauce

1. Mix together the shallot, lemon, yogurt, a pinch of salt and micro plane in the garlic

   

Mushrooms

1. Add the olive oil and spices to a bowl, mix and let sit for 5 minutes to get acquainted

   

2. Tear in your mushrooms, we’re going for about 2-3 inch pieces

   

3. Coat mushrooms in the olive oil mixture and push onto your skewers

   

4. Grill until the mushrooms are crispy around the edges, about 8-12 minutes

   

Assemble Flat Breads

1. Warm your flat bread on the grill, about 15 seconds each side

   

2. Put down a layer of your yogurt sauce

3. Slide on a skewer’s worth of mushroom

4. Top with arugula and a drizzle of olive oil

5. Salt to taste and add a squeeze of lemon if you want it to pop more
