Juicy Smoked Aji Chicken

Intro:
I'd pay $15 for this smoked half chicken and want to do it again. Total cook time is about 1-2 hrs. I dry brine the chicken over night, which helps with moisture retention and crisping the skin. If you plan to broil before serving, the dry brine is not necessary. 
Ingredients:
  • 1 whole chicken
  • Kosher salt
  • Aji blend spice or season with your favorite chicken rub
  • 1/2 cup canola oil
  • Juice from 1 lemon
  • 2 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
Instructions:

  • Split your chicken
    • flip chicken on its back and cut out the spine using kitchen shears or a sharp knife. Don't even think about the garden clippers.
    • remove the breast bone by making slits on either side of the breast bone in the cartilage and pulling it out
    • finish by separating the halves
    • watch this video for more details. Do it on 2x speed to scramble your brain like me
  • Season halves generously with the kosher salt and let sit in the fridge overnight
  • An hour before cooking, season with your rub and let sit on the counter
  • Meanwhile, get your smoker up to 275-300F
  • Place your chicken on the smoker with legs pointed towards the heat source
  • We're aiming for ~150F internal temp in the breast and 180F in the thigh
  • Mix together oil, lemon juice, Dijon and Worcestershire
  • About 30 minutes in to the cook, start basting the chicken with the oil mixture. You might call this a mop. 
  • When you hit the internal temps, remove the chicken from the smoker and broil in the oven for 30-60 seconds. Be careful as this can move quickly and the wing tips can scorch is you aren't watching.
  • Slice and forget that turkey exists
