This is the stuff you want. I'd pay an extra $0.75 to get this salsa at a restaurant with a smile on my face. It also takes extremely little effort to make and absolutely 0 chopping.
In addition to spice there's flavor in this green, the texture is smooth, and it's balanced with lime.
The salsa is great with a chip, but I'm a burrito guy and I made this salsa with the idea of a salsa that acts more like a sauce to pour on your next bite of burrito. That's where I want this... on a burrito in my mouth.
If you don't like spicy, just remove the seeds and pith before putting it all in a blender and you'll be right where you want to be.
Ingredients

1 pound jalapenos

3 heads garlic

1 lime
-
½ cup canola oil

½ cup cilantro leaves and stems

1 teaspoon salt + salt to taste

Set your smoker up to 400 degrees F
Cut the heads off your garlic and place in an aluminum foil boat, leaving the cut side exposed and cover with oil
Place the garlic on a sheet pan with your jalapenos and toss your jalapenos in oil
Place your sheet pan on the smoker and smoke for 30 minutes to an hour depending on how much smoke you want. I like an hour, but 30 minutes is plenty. Toss the jalapenos about half way through
Once you’re done smoking, pull the veg off the smoker and place in a bowl covered with aluminum foil and let steam for 10 minutes to loosen the skin for peeling
After 10 minutes and once the jalapenos are cool enough to handle, peel of the skin and stems. Your peel job doesn’t have to be perfect, just get what’s easy. Use gloves or wash hands thoroughly after peeling because jalapeno juice eyes are sad eyes
Place the garlic, jalapeno, cilantro, zest from 1 lime and half it’s juice, and 1 teaspoon of salt in a blender and blend
Once the veg is roughly blended, with the blender still running slowly drizzle in your oil until it is creamy and the thickness you want, I find I like between ⅓ and ½ a cup
Taste and add salt to you preference, I usually add a pinch
Pour in a bowl or jar and enjoy on everything. I would buy a burrito from Chipotle and dump this on every bite. Keeps in the fridge for as long as you dare…

I've even used this as a slather to toast buns because of the oil content and it adds a nice flavor and back ground heat to a toasted burger bun.
